2. As the honey-water mixture heats, attach the whisk attachment to your stand mixer. Place gelatin and remaining 1/2 cup of water in the bottom of the mixer bowl, and use a fork (the mixer attachment usually doesn't get the powdered gelatin at the very bottom) to mix. Add in 1 tablespoon more water if needed, until all the gelatin is wet. Allow to sit so the gelatin absorbs the water as the honey-water mixture comes to the correct temperature.
3. Once the honey mixture is at the correct temperature, remove from heat and turn the mixer onto medium-low.
4. Slowly pour the hot honey mixture into the gelatin as the stand mixer stirs, taking about a minute to pour in all the honey mixture. Do not scrape the sides of the pans, pour in only what comes out easily from the pan.

2. Pour the cold water into the bowl of a stand mixer and sprinkle gelatin onto the surface of the water. Set aside.
3. In a heavy, high-sided pot, combine granulated sugar, brown rice or corn syrup, warm water, and kosher salt. Heat over a low flame and stir until sugar is completely dissolved. Turn heat up to medium and continue to cook, without stirring, until the mixture reaches 240°F (115°C) on a candy thermometer. The sugar will bubble up, but if you've got it in a pot with high sides, it shouldn't boil over. If it threatens to escape, remove the pot from the heat for a few seconds and stir the contents before returning to burner.
4. Once the sugar reaches 240°F (115°C), remove from heat. Immediately pour into gelatin and beat with a stand mixer using the whisk attachment until it becomes white, light and fluffy, about 10 minutes. You can use an electric hand beater, but it will take longer to fluff up, about 15-20 minutes. If you use a hand beater, be aware that the fluff will try to crawl up the beaters in its attempt to make a mess. Once done, the marshmallow fluff will have nearly tripled in bulk. Add vanilla and beat until well integrated into the fluff.

1. Take a 9 x 9 pan and line it with parchment paper. In a small bowl, mix together the powdered sugar and arrowroot. Sprinkle a good bit of this mixture over the bottom of the 9 x 9 pan that is lined with parchment paper and set aside.
2. In the bowl of your stand mixer* pour 1/2 cup of water and sprinkle the 3 tablespoons of gelatin over the water and let it soften with the water, also called letting the gelatin bloom for about 10 minutes.
3. While the gelatin is blooming, pour the other 1/2 cup of water into a medium-sized saucepan. Add the maple sugar and honey into the pot and attach a candy thermometer* to the saucepan.
4. Place the saucepan over a medium-high heat, stirring just the first minute as it heats up to 240° which is the “soft ball” stage, this can take about 15 minutes. Keep an eye on your thermometer so that you don’t go above 240°. Stirring throughout the heating process will not help it reach a higher temperature faster but may cause it to boil over so we suggest against too much stirring after the first minute.

2. In the bowl of a stand mixer, add 1/4 cup of filtered water and sprinkle gelatin over the water to "bloom." Set aside.
3. In a thick-bottom saucepan over medium heat, heat remaining water (1/4 cup), honey and salt together. Bring to a simmer and reduce heat to medium-low.
4. Continue to simmer honey mixture over low heat for approximately 12 minutes, stirring constantly so it doesn't overflow. Watch the honey mixture carefully so it remains contained.

4. With mixer on low, slowly drizzle in honey/cocoa mixture. Once the honey is added, turn mixer as high as you can (I used speed 8 on my KitchenAid) and beat until color becomes pale and glossy and the marshmallow fluff can stand up in peaks. This should take about 15 minutes.
